Cape Grace Chardonnay is a single vineyard wine grown on well drained ironstone gravel soils in Wilyabrup, Margaret River.
The fruit is handpicked in the cool of the morning and pressed immediately upon arrival at the winery. The juice is then cold settled.
Wild yeast fermentation occurs in new and seasoned French oak barrels, with lees stirring once per week. Around 75% of the wine undergoes malolactic fermentation. Maturation lasts for 10 months.
Pale straw green, Cape Grace Chardonnay is a bright wine with white stone fruit flavours, creamy textures and delicate citrus acidity. Cellaring potential is 15 years.
